Almond Cake with Blue Cheese and Figs
- 225gms butter
- 285gms caster sugar
- zest of 1 lemon
- 4 eggs
- 230gms ground almonds
- 90gms flour
- dried Turkish figs and blue cheese to serve
Preheat the oven to 175°C
Butter and paper the bottom of a 28cm diameter cake tin. Cream the butter, sugar and zest until pale and thick. Add the eggs one at a time, beating well after each. Stir in the almonds and flour and pour the mixture into the tin. Place in the oven and bake 30-40 minutes until a skewer inserted into the middle comes out clean.
Remove from the oven, cool, remove from the tin and serve in wedges with dried Turkish figs and your favourite blue cheese.
