Balsamic Blueberries

Makes ¾ cup

Ingredients

  • 2 tbsp balsamic vinegar
  • 3 tbsp white sugar
  • 3 tbsp water
  • pinch salt
  • 1 C blueberries
  • 1 tsp butter

Comments

This quickly made fresh relish, which can be prepared ahead of time and warmed before serving, is good to serve with lamb, ham, pork or turkey.

Method

Put the balsamic vinegar, sugar, water and salt into a small saucepan. Put over a gentle heat and stir until it comes to the boil. Simmer for a minute or two to form a light syrup.

Add the blueberries and gently swirl the pan for a minute or two, just until the blueberries start to soften. Add the butter and swirl into the blueberries. Serve warm or re-warmed.
