Barbequed Vine Tomatoes
- Vine tomatoes
- Olive oil
- Sea salt
- Ground black pepper
Rub your vine tomatoes with olive oil, leaving the top stem in.
Place on very low heat on the barbeque, turn from time to time, cook for about 5 minutes.
Place in baking tray, sprinkle with sea salt and freshly ground black pepper.
Drizzle with a little red wine vinegar and extra virgin olive oil, then cover with foil to keep warm.
Serve the squid with the tomatoes and fresh rocket and parmesan shavings… and a decent vinaigrette of course!
