Beef Steak Pudding

Ingredients

  • 8 ozs/225 grams breadcrumbs
  • 1 1/2lbs/700 grams steak (cheap cut)
  • 8 oz/225 grams flour
  • 1/2lb/225 grams suet
  • 3 lambs kidneys
  • 1/2 breakfast cup water
  • 1 tsp baking powder
  • Salt and pepper to taste

Method

Mix breadcrumbs, flour, suet, salt and pepper, and baking powder together. Then add enough cold water to mix.

Cut up steak and kidneys and dredge with flour.

Roll out the dough mixture and line a pudding basin, keeping some for the top.

Then fill with the meat, kidneys and salt, and add a little water.

Cover with a round of dough and pinch edges together. Tie over a floured cloth or a piece of greaseproof paper.

Place basin in a saucepan of boiling water and boil for three hours. Water must come only half way up the side of the basin. Check water and keep boiling all the time.
