Black-bean Brownies

These brownies are filled with healthy protein and fibre and are also gluten-free. They have a wonderful texture, a little bit fudgy, yet still firm. Your kids will love them - and they will never know they are eating beans!

Ingredients

  • 125g chocolate
  • 1/3 cup coconut oil
  • 425g can no-salt black beans, drained and rinsed
  • 3 large eggs
  • 1/4 cup raw cacao powder (or cocoa powder)
  • 2 tsp vanilla essence
  • 1/2 cup brown sugar (or coconut sugar)

Method

Preheat oven to 180 degrees celsius. Grease or line a tin 25cm x 25cm brownie tin.

Combine the chocolate and coconut oil together in a heatproof bowl. Gently melt in the microwave on a medium heat, using short bursts (30 seconds at a time), stirring between each burst. You want the two ingredients to be melted and combined.

While the chocolate mixture is melting, put the black beans, eggs, cacao, essence and sugar into a food processor or blender. Blend until smooth. Then add the chocolate mixture and blend till combined.

Transfer mixture to the prepared brownie tin and bake for 20-25 minutes. Cool before cutting into squares.
