Boston Bun

  • 1 cup cold mashed potatoes
  • ¾ cup sugar
  • 2 cups flour
  • 2 tsp baking powder
  • half tsp salt
  • 1 cup fruit (eg, sultanas or mixed dried fruit)
  • 1 cup milk
  • icing
  • 60g soft butter
  • 2 cups icing sugar
  • a little milk
  • pink cochineal
  • coconut for decoration


Beat the potato and sugar until creamy, then add the rest of the ingredients.

Bake 30 minutes at 180°C in two 20cm round sponge tins (well buttered and floured).

Turn the buns onto a wire rack and ice while warm, not hot, or the icing will run off.

Make the icing by mixing the butter with the sifted icing sugar and milk. Colour the icing pink if you wish and press the coconut into it.
