Ingredients

  • 2.5 kg topside silver side
  • 700ml post party red wine
  • 840ml  white wine
  • 425gm coarse salt
  • 1 bunch rosemary
  • 12 bay leaf
  • 1 bunch thyme
  • 3 clove garlic
  • 4 strips orange peel
  • 12 chillies
  • 60g honey

Method

Bring wine to blood temp then add salt and spices add trimmed beef.

Marinate for seven days moving meat daily then drain.

Bind and hang for 7 days.
