Chicken patties with white beans and chive yoghurt
Makes 100 servings
(Serve with potato wedges)
- 10kg chicken mince
- 1kg of chopped onion
- 2kg boiled potatoes and grated
- 100g of garlic, crushed
- 25g of pink pepper coarsely crushed
- 2 cups corn flour
- Salt (about 50g)
Mix everything together.
Shape the patties then fry them quickly in oil and finished in the oven or cook at 160 degrees, about 15 minutes or 75C core temperature.
White bean and chive yoghurt
- 5 L thick yogurt
- 1kg white beans, cooked and blended.
- 200g chives or spring onions chopped
- Salt and pepper
Mix together and season with salt and pepper.
