Chocolate Mud Cake

Ingredients

  • 1 1/2 cups self-raising flour
  • 1/3 cup cocoa powder
  • 1/2 cup flour
  • 1 cup boiling water
  • 225 gms butter
  • 200 gms chocolate (couverture or compound)
  • 1 1/2 cups sugar
  • 1 tbsp instant coffee
  • 1 tbsp oil
  • 2 eggs (lightly beaten)

Method

Slowly melt butter, chocolate, sugar, coffee, oil and water together. Leave till Luke warm. Add to well-sifted dry ingredients, then add eggs.

Pour into lined 8 inch tin (this makes a good 8 inch square cake but can also go into a 9 inch round) and bake at 160°C for two hours approx, or until skewer comes out clean.
