Christmas Cake
Ingredients
- ½ lb butter
- ½ lb sugar
- 1 lb flour
- 3 eggs
- small cup of milk
- 1 tsp baking soda
- 3 ½ lb mixed fruit
- 1 tbl golden syrup
- 1 tsp each of vanilla, lemon essences
- 1 tsp rum
Method
Bring milk to the boil and tip over the chopped butter.
When the butter is melted, add the sugar and stir.
Add the eggs and stir.
Add the soda.
Add this to a bowl with the fruit and flour mixed together.
Add essences and rum. Stir well.
Add 2 Tbl boiling water and stir.
Put in a greased and paper lined tin. Bake for 3 1/2 hours at 130 - 135 depending on your oven.
