Christmas Fruit Mince Croissants

  • 8 croissants
  • 320 gm Christmas fruit mince
  • 1 C cream, whipped
  • 2 tbsp icing sugar
  • ¾ tsp cinnamon


Preheat oven to 150°C.

Make a cut lengthwise along the top of the croissant to about three-quarters of the depth of the croissant.

Fill each with two rounded tablespoons of Christmas fruit mince.

Place croissants on a low-sided baking tray and place in a preheated oven for six to seven minutes to warm.

Remove from oven and, when cool enough to touch, top each croissant with cream.

In a small bowl combine icing sugar and cinnamon and shake through a fine sieve on to each croissant. Transfer on to a serving plate and serve warm.
