Coconut and Orange Waffles (gluten free)

Ingredients

  • 150gms brown rice flour
  • 50 gms tapioca flour
  • 50 gms buckwheat flour
  • 200 gms coconut milk
  • 50 mls water
  • 1  & 1/2 tsp yeast
  • rind of 1 orange
  • 70 gms egg white
  • 1/2 tsp salt
  • 2 Tbs brown sugar
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder

Method

Mix brown rice flour, tapioca flour, buck wheat flour, coconut milk, water and yeast together ( should be the consistency of cream). Adjust if necessary. Leave this mix in a warm place for 4-6 hours. This is called a pre-ferment.

In a blender or with an electric mixer, combine the preferment and  the rest of the ingredients. Mix for 3-4 minutes or until light and frothy. Cook this mix in a waffle iron as per instructions.
