Cold Smoked Pears

Ingredients

  • 1 cup apple juice
  • 3 tablespoons butter
  • 2 tablespoons liquid honey
  • 1 vanilla pod, split lengthways
  • 2 cloves
  • 4 pears, halved and cored

Method

I like to use maple or apple wood but use what you prefer. You will need enough wood or wood pellets for a 1-hour smoke.

Place a small saucepan over a medium heat and combine the apple juice, butter, honey, vanilla pod and cloves. Cook to a syrup.

Place the pear halves in a low-sided tray then pour the apple syrup over the pears, coating them well.

Once the smoker is producing smoke, place the pear halves in the smoker for 1 hour, ensuring the chamber temperature remains under 40ºC. The pears are best roasted in the oven after smoking
