Compote of Rhubarb

  • 500g of rhubarb
  • Juice of an orange
  • Several strips of orange rind (removed with a vegetable peeler)
  • ¾ cup sugar


Wash the rhubarb and cut into pieces about 4 cms long. Place in a double boiler. Add the orange juice, strips of orange rind and sugar.

Cook over boiling water until tender and then leave to cool.
