Easy Wild Goat Marinade

Ingredients

  • ½ cup olive oil
  • 1 tbsp oregano  
  • 1½ tsp black pepper
  • 1½ tsp salt
  • 1 tbsp lemon juice
  • 1 tbsp white vinegar
  • 2 tsp garlic, minced
  • 1 tsp ginger, minced

Method

Add all ingredients into a food processor and pulse into a paste. Coat the goat meat completely with the paste, put it onto a casserole or roasting dish and cover with tinfoil and refrigerate. Marinate for at least two hours. Take the meat out of the fridge when you turn the oven on (200°C). Cook for 40 minutes, reduce the heat to 180°C for 2 hours. The meat is finished when the juices run clear. Let the cooked meat rest for 15 minutes before carving.
