Ema Datsi (chilli-cheese)
- 10 green chillies
- 3 cloves of garlic
- 1 potato peeled
- one red onion
- 20 green beans (or round beans or any green vegetable, asparagus works really well)
- 150-200g of blue cheese
Slice the potato into slices and add to a saucepan.
Cut the chillies in half and remove the tops (leave seeds) Cut the beans in half (slice lengthways up the middle) Add 3 cloves of garlic Place all the ingredients in the saucepan and cover with water.
Add salt to taste (1tsp)
Partially cover with lid and cook for 15-20 minutes until potato is soft and the water has nearly evaporated Crumble in the blue cheese (150-200g) Let cheese melt, mix through with the vegetables Serve on basmati rice
