Finger-licking BBQ Spare Ribs

Method

Take the desired quantity of (free-range) pork spare ribs (allow at least 6 per person – they’re moorish!) and, keeping the ribs whole, smother them in the BBQ sauce. Reserve some sauce for serving.

Marinate them, preferably overnight, and bring to room temperature before barbequing. Barbeque for ten minutes over coals, then slice one rib off to check and see that it’s done. You don’t want pork to be rare.

Serve on a huge platter with the heated BBQ sauce you reserved earlier.

(You can also use pork strips for this recipe, and leftovers are divine in a stir-fry the next day!)
