Gazpacho

Ingredients

  • 2 cups or 500 mls tomato juice
  • 3 tomatoes, peeled, de-seeded and finely diced
  • ½ cup or 125 mls Sauvignon Blanc
  • 1 teaspoon sugar
  • Salt and pepper, to taste
  • Tabasco sauce, depends how spicy you like it
  • 1 avocado, finely diced
  • 1 telegraph cucumber, peeled, de-seeded and finely diced
  • 1 red capsicum, diced
  • 1 stick celery, diced
  • 4 spring onions, chopped

Method

Combine first six ingredients into a bowl of a food processor, and whiz till smooth, strain through a fine sieve.

Add the diced vegetables and correct seasoning.

Chill until ready to serve.
