Jonnny Schwass's Mum's Mum's Ginger Slice

Ingredients

For the base:

  • 125g butter, softened
  • 1/2 cup sugar
  • 1 1/2 cups self-raising flour
  • 1 tsp ground ginger

For the icing:

  • 170g butter
  • 2 tbsp golden syrup
  • 3 tsp ground ginger
  • 2 cups icing sugar

Method

Preheat oven to 180°C. Grease and line a slice tin and set aside.

Have a weak cup of tea and do the across section of the daily crossword.

Cream butter and sugar together until fluffy. Sift flour and ginger together. Mix into creamed mixture. Press mixture into tin slice.

Sneak a piece of crystalised ginger.

Bake in the preheated oven for 20 minutes.

Meanwhile make the icing: melt the butter and golden syrup with ground ginger. Sift in icing sugar and mix well, then pour over hot base when it is removed from the oven.

Allow to cool, finish the down section of the crossword, remember you left your cup of tea at the mailbox when you collected the daily news, return to the kitchen to discover someone has baked you a lovely ginger slice, smile, slice and be happy.
