Hash Brown with Salmon Entree
- One hash brown for each diner (and a couple to scoff in the kitchen)
- Cream cheese
- Hot smoked salmon. (Farm Smokehouse hot smoked salmon is paticularly good for this)
- Some snippets of green onion, thyme, marjoram
- ½ cup oil
- 3 Tbl cider vinegar
- 4 Tbl honey
- 1 Tbl mild mustard
- 1 Tbl chopped fresh mint
- Salt and pepper
I recommend bought hash browns for this popular smoked salmon entrée that is a wonderful combination of hot and cold, smooth and crisp, sweet and savoury.
Combine dressing ingredients. Blend until smooth.
Cook hash browns in 200 oven until crisp and brown.
Put 1 tsp cream cheese in middle of each hash brown.
Cover cream cheese and top of hash brown with the cool hot smoked salmon.
Dribble a little dressing over.
Sprinkle artfully with finely minced green onion and herb snippets.
