Hash Brown with Salmon Entree

  • One hash brown for each diner (and a couple to scoff in the kitchen)
  • Cream cheese
  • Hot smoked salmon. (Farm Smokehouse hot smoked salmon is paticularly good for this)
  • Some snippets of green onion, thyme, marjoram

For dressing:-

  • ½ cup oil
  • 3 Tbl cider vinegar
  • 4 Tbl honey
  • 1 Tbl mild mustard
  • 1 Tbl chopped fresh mint
  • Salt and pepper


I recommend bought hash browns for this popular smoked salmon entrée that is a wonderful combination of hot and cold, smooth and crisp, sweet and savoury.


Combine dressing ingredients. Blend until smooth.

Cook hash browns in 200 oven until crisp and brown.

Put 1 tsp cream cheese in middle of each hash brown.

Cover cream cheese and top of hash brown with the cool hot smoked salmon.

Dribble a little dressing over.

Sprinkle artfully with finely minced green onion and herb snippets.
