Holiday Bean Bake

(Serves 2)


  • 1 420g tin of Baked Beans in tomato sauce
  • 1 medium sized onion
  • 100g bacon, crisply grilled
  • 1 heaped tablespoon Golden Syrup
  • Freshly ground black pepper
  • Chilli flakes (optional)
  • Fresh breadcrumbs
  • Knobs of butter for breadcrumb topping


Pre-heat oven to 180º C.

Peel onion and cut in half lengthways. Coarsely chop each half across the grain and brown in a little butter or oil in non-stick frying pan.

Butter a small casserole or soufflé dish measuring about 14 cms in diameter.

Empty contents of can of beans into a separate bowl and mix with golden syrup, freshly ground black pepper, chilli flakes (suggest ¼ teaspoon) if required, and coarsely chopped bacon. When all contents are evenly distributed, pour into cooking/serving bowl. Top with breadcrumbs and dot with knobs of butter.

Place in the pre-heated oven and bake for approximately 30 minutes.

Serve for Sunday night supper with warm crusty bread.
