Kim Chi

  • 1 cabbage
  • 3 carrots peel and thin slice
  • 20g salt
  • 5g chipotle    
  • 5g chilli Flakes
  • 5g chilli Powder    
  • 5g fresh chilli   
  • warm water
  • 1 tbsp garlic
  • 1 tbsp ginger (peeled and sliced)
  • 3-4 spring onions (sliced)
  • 2 tbsp fish sauce
  • 2 apple (cored and diced)        
  • 1 pear (cored and diced)
  • 1 onion (peeled and diced)


Cut cabbage up nice and fine. Add salt and carrot. Massage together well.

Let it sit out for 4 hours.

Mix the spices with the water.

Blend up the rest the ingredients apart from the spring onions.

Mix all the ingredients into the cabbage and carrot well.

Leave out for 24hrs and then put into fridge.
