Marinated Lamb Cutlets

2 teaspoons chopped fresh thyme leave
1 clove garlic, minced
1 tablespoon olive oil
6-8 individual lamb cutlets
Mix thyme, garlic and olive oil together and rub over lamb cutlets. If you have time, marinate for an hour, or up to 48 hours.
Heat a drizzle of olive oil in a large fry-pan on medium to high heat.
Season lamb cutlets with salt and cook 1 minute on each side for medium rare, or until cooked to your liking. Set aside to rest a few minutes.
Serve with Beans, Mint, Feta and Potatoes
