Marmalade and Rum Grilled Grapefruit
- 2 grapefruit
- 2 tablespoons of quality marmalade
- ¼ cup of rum
- 75 grams of soft goat cheese
- chopped walnuts or pistachios to garnish
- mint to garnish
Halve grapefruit and place cut side up in a shallow baking dish lined with tin foil.
Run a knife around edges and between segments of grapefruit.
Mix marmalade with rum and spread over cut side of grapefruit. Top grapefruit with crumbled goat cheese.
Place under hot grill until caramelised (approximately 5 minutes).
Remove from grill and garnish with chopped mint and chopped walnuts or pistachio.
Alternative: Replace grapefruit and goat cheese with blood orange and feta.
