- 1 onion, thinly sliced
- 1 red capsicum, thinly sliced
- knob of butter
- 1 kg pork and/or beef mince (best quality)
- ½ cup any chutney
- 2 cups fresh breadcrumbs, not too fine, any sort of bread
- salt and pepper
- 200 gms feta
- big bunch spinach
- handful of fresh sweet marjoram if available, or parsley
Sauté onion and capsicum in a little butter until softened, either in a pan or microwave.
Mix meat, chutney, salt and pepper, onions and breadcrumbs together.
Roughly chop spinach and add with the herbs to meat mixture.
Line a loaf tin with baking paper and press a third of mixture in.
Break feta into large lumps and press half into meat. Add another third of meat and repeat feta. Add final third of meat.
Cook at 180°C for 30-45 minutes or until juices run clear.
