Peanut Butter Dumplings

Ingredients

  • 1 cup wholemeal flour
  • 1 teaspoon baking powder
  • 50g unsalted butter
  • 2 tablespoons crunchy peanut butter
  • ¼ cup tasty cheese, grated
  • 2 tsp finely chopped fresh rosemary
  • 1 tsp fresh thyme leaves

Method

Put flour and butter in a food processor and blitz to form breadcrumbs (or rub together by hand). Add remaining ingredients and blitz again quickly. Transfer into a bowl. Sprinkle over enough water and stir with a knife to form a soft dough. Roll into small balls about the size of walnuts. Place on top of stew and place the base of the crock (without the lid) in a 200 degree oven for 20-25 mins, or until dumplings are golden. Serves 4
