Pesto Mash

  • 1kg potatoes (Ilam Hardy, Agria, Red Rascal)
  • 100g butter
  • ½ cup grated Parmesan
  • ¼ cup olive oil
  • 3 tbsp pesto


Boil and drain potatoes. Mash with butter and oil. Mix through Parmesan and pesto.
