Pine-Needle Vinegar or Homemade Balsamic
Evergreen pine needles are rich in vitamin C and oozing with antibacterial properties - just the thing to prevent or treat colds and sore throats. Gathering pine needles is a wonderful weekend activity for the family.
raw apple cider vinegar, to cover pine needles
pine needles, washed and roughly chopped
Fill a sterilised 1-litre jar with the pine needles.
Pour in the vinegar to cover the needles. Seal with a non-corrosive lid or baking paper with a rubber band around it. Label with the date and contents.
After six weeks it’s strong enough to be called ‘Homemade Balsamic’.
Makes 1 litre
