Potato and Feta Cakes

  • 500g potatoes cooked
  • 1 cup crumbled feta
  • 4 green onions minced
  • 2 tbsp minced thyme
  • Juice of one lemon
  • 1 egg beaten
  • salt and pepper
  • seasoned flour


Gently, roughly or partially mash the potatoes.

Mix in all the other ingredients except the seasoned flour.

Take care with seasoning. The feta is salty. But as its snack food saltiness needs to be a little more pronounced.

Form into small walnut size, falafel-shaped objects well floured.

If you fear that they may fall apart during frying, add an egg wash to the flouring process. Beat 1 egg with 4 tbsp milk, season it and when forming the balls, dip in flour, then egg wash, then flour again.

Fry in half butter-half oil until brown.
