Rack of Pork in Hay
- 1 rack of pork (with six chops, and skin scored and rubbed with salt)
- 8 crushed garlic cloves
- 3 Tbs olive oil
- 3 handfuls of hay (untreated)
- small bunch of rosemary
- small bunch of thyme
- 3/4 cup of white wine
- 6 pickling onions ( cut in half with skin on)
- 6 jerusalem artichokes
Preheat oven to 180C.
Heat olive oil in a heavy based pan add the rack and cook over a moderate heat until pork rack is evenly browned.
Put the hay, thyme and rosemary in a casserole and pour in the white wine.
Place pork rack, onions and jerusalem artichokes on top and cover with a lid.
Cook in the preheated oven for 1 hour.
Remove and leave to sit for 15 minutes to rest before serving.
Looks great served centre of table, straight from the casserole dish.
