Raspberry, Lime and White Chocolate Blondie

  • 3 cups of white sugar
  • 300 grams of butter
  • 6 eggs
  • zest and juice of 3 limes
  • ¾ cup of raspberries (frozen is fine)
  • 1 ½ cups of plain flour
  • 1 block of white chocolate


Melt butter and sugar in a saucepan until sugar is dissolved.

Take off the heat and let cool until just warm.

Beat in eggs one at a time with a wooden spoon.

Add zest and lime juice

Add flour (no need to sift)

Our into a large brownie tray and dot raspberries and chocolate over the top.

Bake at 180 degrees until just cooked (don't over do it)
