Roasted Figs with Gorgonzola and Parma Ham with Waldorf Salad

(Serves 6)

Ingredients

  • 12 fresh figs
  • 24 thin slices of Parma ham
  • 200g Gorgonzola
  • 1 apple sliced and cut into strips
  • 2 heads of chicory cut into strips
  • 1 head of celeriac cut into strips
  • 12 walnut halves
  • 1 tablespoon chopped chives
  • ¼ cup good extra virgin olive oil
  • flaky salt to taste
  • cracked pepper to taste
  • juice of 1 lemon

Method

Cut figs in half long ways place a small wedge of the Gorgonzola on the inside of the fig now wrap the fig and the cheese together with the parma ham. Place in an open flat pan and roast in a hot wood fired oven at 300c of 5-10mins the figs should be soft but holding there shape a standard oven is fine to use as well you may need to finish them under the grill to get a nice roasted colour on them.

Place all the prepared vegetables into a bowl with the lemon juice and salt for ¾ minutes just to soften them.

Add the walnuts, olive oil and chives and combine well.

Place a small mound of the salad in the centre of you plate and place the figs around the outside and drizzle with the juice from the roasting of the figs.
