The fast food world is awash in wraps and there are packets of them available at the supermarket to fill yourselves. The fast food link might make these a socially acceptable lunch item, and you can try to sneak in something satisfyingly healthy. The only rule is to avoid things that make the wrap itself go soggy.
Combine the cheeses, carrot and nuts, smear the bread with marmite, spread mixture on top, roll up. Makes two wraps. Vary this as your imagination suggests.
Cocktail Sausages in hot tomato sauce in a thermos.
I'm not sure exactly how this qualifies as nourishing, but it's a lunch I remember very fondly from my childhood. I had it only once, but it set a benchmark of what a lunch could be.
Heat the small sausages in water, drain then add a good quantity of tomato sauce and put back on the heat until the sauce is hot, but not boiling. Add all to the thermos and send along a toothpick or two as utensils.
Either pizza bases or small pita bread will suit here, and the scheme is to empower the lunch eater. Make it a Sunday evening activity. Get them to choose their own ingredients to top the pizzas and assemble them themselves, this way they are contractually, perhaps even morally obliged to eat them. Cook enough for the first three days of the week. It pays to undercook the pizzas a little when they are to be eaten cold later.
