Smoked Fish Salad with Kaffir Lime Dressing
- 2 cups flaked smoked fish, be careful to remove all the bones, scales and any dark brown flesh. I like to use smoked snapper most of all, but trevally, kahawai, hot smoked salmon are all excellent in this salad
- 2 cups cooked baby potatoes, sliced or quartered (you can use large potatoes)
- 1 cup papaya, diced
- 1 cup celery, I prefer peeled to remove the strings, then sliced or diced
Arrange all the salad ingredients nicely on a platter or a shallow salad bowl.
Dot the kaffir lime dressing over the salad and garnish with some salad leaves or fresh herbs.
- 1 cup crème fraiche
- 3 fresh kaffir lime leaves, very finely chopped - almost to a powder, otherwise the leaf gets stuck in your teeth!
- 1 pinch of fine salt
Mix all the dressing ingredients together well.
