Spice Mix - Ras El Hanout

There’s no one recipe for Ras el Hanout; it has been freely interpreted for generations, and apart from the fact that it almost always contains nutmeg, cinnamon and cloves, cumin and coriander, the number and quantities of ingredients vary wildly. In addition, whole spices are sometimes used and even roasted separately before grinding. In this very good, but simpler, version ground spices are used:

Ingredients

  • 1 tsp nutmeg
  • ½ tsp ground cloves
  • 2 tsp turmeric
  • 2 tsp cinnamon
  • 1 Tbsp ground coriander
  • 1 Tbsp ground cumin
  • 2 tsp ground ginger
  • 2 Tbsp paprika
  • ½–1 tsp chilli powder
  • 1 tsp whole fennel seeds, ground
  • 1 tsp freshly ground black pepper

Method

Combine thoroughly and keep in an airtight jar, in a cool dark place.
