Sugar and Spice Salmon

Cooking Time : 5 minutes

Ingredients

  • 250g salmon loin
  • 1/3 cup flour

Marinade:

  • 150ml mizkan yasashii osu (vinegar)
  • 6 tablespoon soy sauce
  • 2 tablespoon ryorishu (cooking sake)
  • 2 tablespoon sugar
  • 1 red chilli (dry or fresh), chopped
  • 1/2 onion, sliced
  • 1/3 red capsicum, sliced
  • 1/3 green capsicum, sliced
  • 1/3 yellow capsicum, sliced

Method

1. In a small bowl, mix all the Marinade sauce ingredients. Set aside

2. Cover salmon with flour and shake excess flour off

3. Heat oil to 170 - 180 degrees in deep frying pan

4. Place the salmon in the frying pan and cook for 1-2 minutes

5. Drain the excess oil and place the salmon into the sauce bowl and cover the salmon with vegetable

7. Place the bowl in a fridge and marinate over night

8. Serve the salmon and vegetable in a bowl or on top of soup spoons for canapes / finger foods
