Sweet Mustard Fruits

Sweet, sharp, and fruity, this is one of my favourite recipes to accompany a glazed ham.

Preparation time 15 minutes
Cooking time 15 minutes
Serves 12

Ingredients

  • 500 gram selection of dried fruit (apricots, figs, prunes, apples)
  • 3 firm ripe pears, peeled and thickly sliced
  • ½ pineapple, skinned and sliced into wedges
  • 565 gram can lychees in syrup
  • 1½ cups dry white wine
  • 1 cup savoury-style apricot sauce
  • ½ cup white wine vinegar
  • ½ cup brown sugar
  • ¼ cup wholeseed mustard

Method

In a large saucepan, put the dried fruit, pears, pineapple, lychees and syrup, white wine, apricot sauce sugar, vinegar, sugar and mustard and stir together.

Bring to the boil, then lower the heat and simmer, uncovered,  over a gentle heat for 15 minutes or until the pears are tender.

Stir the apricot sauce through the fruit.

Cool a little before transferring to a serving dish to be served warm or cold.
