Tamarillo Chutney

Ingredients

  • 2 kilograms tamarillos, peeled and chopped                                       
  • 2 teaspoons salt
  • 500gms onions, chopped                                                                            
  • 1 teaspoon mixed spice
  • 2 cups raisins                                                                                                    
  • ½ teaspoon cayenne pepper
  • 1 clove garlic, crushed                                                                                   
  • 4 cups malt vinegar
  • 4 cups brown sugar

Method

Place all ingredients into a preserving pan, stir well then boil gently with frequent stirring for 2 hours or until chutney is thick and jam-like. Pack into sterilised jars. Makes about 6 x 350ml jars.
