Tofu with Maple Syrup

Ingredients

  • 3 Tbsp oil
  • 300g tofu cubed into 2cm pieces
  • 1Tbsp minced garlic              
  • ¼ cup soy or tamari
  • 1 Tbsp minced ginger            
  • Juice of ½ lemon
  • 1 Tbsp maple syrup               
  • 1 Tbsp minced herbs - Ruth uses coriander, basil mint and Vietnamese mint

Method

Sauté garlic, ginger and herbs in olive oil on medium heat for 1 minute.

Add the cubed tofu and coat all the pieces. Stir carefully.

Pour soy or tamari over and stir. Sauté for 2-3 minutes.

Add the lemon juice and maple syrup. The mixture will be quite watery.

Sauté until the tofu has absorbed all the liquid, 4-5 minutes or an additional minute if you like a crunchy texture on the outside of the tofu.

Serve immediately. Good with a stir fry or mixed roast vegetables. Good reheated too!
