Tomato Vinaigrette

Very simple, and yet very good. Fabulous with fish, chicken, spinach salad and pasta.

Ingredients

  • Makes about 400ml
  • 6 medium tomatoes, seeded and diced
  • 50ml red wine vinegar
  • 120ml extra virgin olive oil
  • 30g shallots, finely chopped
  • 1 tbsp finely cut chives
  • salt and pepper

Method

Mix all the ingredients together, and season to taste. Warm very gently.
