Tuna pasta

Serves 2 

This is a staple in our house; quick, simple and delicious.

Ingredients

  • olive oil
  • 1 tin tuna (200g) in olive oil
  • 2 cloves garlic
  • 1 teaspoon crushed chili (keep a jar in the fridge)
  • two good handfuls of chopped Italian parsley
  • 2 anchovy fillets
  • spaghetti for 2

Method

Heat olive oil, garlic parsley and chili in a frying pan. Heat gently for a couple of minutes. Add the anchovies and tuna and break up, then season. Cook for a further ten minutes add pepper if necessary. Meanwhile, cook pasta in lots of salted, boiling water. Drain and tip into sauce toss and serve with Parmesan and some fresh chopped parsley.
