Vegetarian Barbecue: Capsicums and Courgettes

Make sure the barbecue is hot before placing vegetables on the chargrill. For a delicately smoked flavour, soak some manuka woodchips in water for 30mins then wring out excess water. Wrap tightly in tinfoil and prick holes in the package. Place directly under the chargrill.

Ingredients

  • 2 red capsicums
  • 4 courgettes
  • 2 tbsp avocado oil infused with lime (available from supermarkets)

Method

Cut capsicums into quarters and remove seeds. Halve courgettes lengthwise. Rub vegetables with the avocado oil and leave for at least an hour. Chargrill on a preheated barbecue. Don't overcook, the vegetables should retain some crunch.
