Flavours of Asia Dressing

Ingredients

  • 1 lime
  • Small bunch of fresh coriander
  • 4 tbsps soy sauce
  • 4 tbsps fish sauce
  • 3 tbsp sesame oil
  • 100mls grapeseed oil
  • A small pinch of brown sugar

Method

Make very finely grated zest of the lime and squeeze all the juice into a screw-topped  jar. Chop the coriander finely and add with the zest and the remaining ingredients, and shake well together. Use this dressing judiciously and store in the refrigerator for 2-3 weeks.

Use this dressing for green salads, especially with cucumber, and salads that have lightly blanched beans, peas, courgettes, broccoli, mushrooms, spinach leaves, carrots and Asian greens.

Makes about 1 cup.
