Prune and Red Onion Jam

Ingredients

  • 3 tablespoons olive oil
  • 5 large red onions, thinly sliced
  • 1 tablespoon finely chopped rosemary
  • 2 cloves garlic, finely chopped
  • 4 tablespoons balsamic vinegar
  • 1 ½ cups pitted prunes
  • ½ cup water
  • 6 tablespoons brown sugar
  • salt and freshly ground black pepper to taste

Method

Heat the oil over moderate heat. Add the onions, rosemary and garlic and fry until browned.

Add the balsamic vinegar, prunes, water and sugar, bring to the boil and simmer 20 minutes until the mixture is thick and the onions are soft.

Taste and season with salt and pepper.

Remove from the heat. Reserve.
