Spicy Smoked Almonds

Ingredients

  • 450 gms unblanched raw almonds
  • 2 Tbs vegetable oil
  • 1/4 tsp cayenne pepper
  • 1/2 tsp garlic powder
  • 1 Tbs table salt
  • 2 tsp chilli powder
  • 1 tsp freshly ground black pepper

Method

Lay almonds on a rack, such as a mesh cooling rack - if the slats are too wide, cover the rack with foil and poke a lot of holes in it.
Cold smoke the almonds for 2 to 3 hours.

Preheat the oven 190°C

Combine the oil and spices in a bowl and toss with the almonds to coat. Spread them on a baking sheet and roast for 10 - 15 mins stirring several times. Remove from the oven, taste and toss with more salt if needed.

(These nuts can be stored in an airtight container for up to 2 weeks)
