Warm Roast Root Vegetable Salad with Maple Balsamic Dressing

(Makes 4 portions)

Salad

  • 300g sweet potato
  • 300g pumpkin
  • 2 parsnips
  • 1 red onion
  • 150g cherry tomatoes halved
  • 3tbsp toasted pumpkin seeds
  • 3tbsp crumbly feta
  • 1 handful of torn rocket 

Method

Roast all the root vegetables until golden and tender.

Slice the cherry tomatoes in half and add to the roast vegetables.

Dress the vegetables and tomatoes with the maple balsamic lightly fold through the torn rocket.

Serve on a platter and scatter the toasted pumpkin seeds and feta over the top. Enjoy.
 

Maple Balsamic Dressing

  • 250ml balsamic vinegar
  • 500ml olive oil (good quality)
  • 200ml maple syrup
  • 3 lemons juice only
  • 1tsp chopped thyme

Method

Combine all the ingredients together and puree until well combined. Adjust the seasoning with salt and pepper and pass through a fine sieve. Use now or at a later date.
