New Plymouth's finest fritters

Fifty restaurants from around the country shared recipes for Delaney Mes's New Zealand Restaurant Cookbook. She shares with us one of her favourites – Green Pea and Ricotta Fritters from Monica's Eatery in New Plymouth.

The New Zealand Restaurant Cookbook is a lovely snapshot of what dining in New Zealand is like at the moment, Delaney says.

"It's also one heck of a road trip if you're up for it."

Some of the restaurants shared recipes that were iconic for them, others shared dishes that had been popular recently or were seasonal.

As well as fritters from Monica's Eatery, the book includes recipes from the Duke of Marlborough in Russell, the Smoko Room at Leigh's Sawmill Brewery, Gemmayze St on K Road, Roots of Lyttelton and Fleur's Place in Moeraki.

Fritters are great for brunch or an easy dinner, Mes says, and these ones employ the underrated staple that is frozen peas.

"You can throw them into a pasta easily, fritters, they whip up into a great dip with herbs and lemon and yoghurt."
