US market a tough one for venison to crack

A deer industry executive says the United States is a valuable market for New Zealand venison, but it is tough convincing chefs to use it.

Innes Moffat, who is Deer Industry New Zealand's venison marketing manager, told the industry's annual conference in Napier that the US National Restaurant Association recently published its top 10 trends in food service.

One of the top four trends is putting dishes on a menu that are perceived as being value for money - and that works against venison.

Mr Moffat says it is tough spreading the message about venison when the US Cattlemen's Association spends millions of dollars educating chefs to use cheaper beef cuts instead of chicken and pork.
