Apple and Spinach with Feta and Fennel Crepes

The key is to get the kids to make them as well, crepes are easy and fun and you can fill with any filling – even leftovers!

Apple and Spinach with Feta and Fennel CrepesIngredients

  • 250g plain flour
  • 1 1/2 cups milk
  • 2 eggs
  • a handful of fresh soft herbs (parsley, mint, chervil, dill)
  • 2 apples, grated
  • 3 Tbsp fennel, sliced
  • 1/4 cup feta cheese crumbled
  • 1 cup spinach (or silverbeet), sliced

Method

Mix milk and eggs, whisk into flour and leave to rest for 20 mins. If it's too thick thin with a little milk. Ladle into crepe pans and cook until golden brown, leave to cool.

Mix apple and remaining ingredients, add chopped herbs and roll up into a tight cylinder. Slice and serve.
