- 1 kg peeled apples (a mix of gala & granny smith are recommended) cored & sliced
- ¼ cup white sugar
- ¼ cup brown sugar
- ¼ cup all-purpose flour
- 1 tablespoon vanilla
- 2 tablespoons fresh lemon juice
- 1 teaspoon cinnamon
- ¼ teaspoon ground nutmeg
- 1 large egg white, lightly beaten
Preheat oven to 190°C. In a large bowl, combine apples and all the remaining ingredients excluding the egg.
Spoon filling onto pie base and top with pastry. Brush the top with egg glaze. Bake in middle of oven for 40-50 minutes or until crust is golden.
